A crepe is a a type of very thin pancake, which can be served sweet or savory depending on the toppings. While crepes originate from Brittany, a region in the northwest of France, their consumption is widespread in France and they are considered a national dish. A creperie may be a takeaway restaurant or stall, serving crepes as a form of fast food or may be a more formal sit-down restaurant or café.
Louis la Creperie is going to serve savory and sweet rustic pies, crepes, and galettes. ZOOT ALORS you don’t know what a galette is either? Americannes! It’s sort of like a free form flat crusty pastry pie. Looks like this:
And as for the name, Louis la Creperie is named after Louisville, not Hillbilly Tea’s Karter Louis, who is partnering with Arpi Lengyel and Claudia DeLatorre of Cake Flour to open the new space. Plus they have their liquor license so you can sip on French wine while eating your crepes. BON APPETITE!
